This special cake was baked and decorated by me for my client’s son’s first birthday. They wanted a ‘Penguin themed cake’ as their son was fondly called as ‘Penguin’ at home. Being a self-taught baker, I was excited at the opportunity to create a cake that will capture and express the playfulness of young one-year old in the form of penguins. Also, to make it an enjoyable experience for the kids, I wanted them to look exactly like figurine toys that they can play with and at the same time be fully edible so they can put them in their mouth without worrying their parents. I went for a multi-tiered chocolate truffle cake with chocolate mousse filling and covered it with chocolate ganache and marshmallow fondant that would resemble a beautiful snow capped land mass in Antarctica. For the penguins, I hand crafted each one of them using homemade marshmallow fondant from scratch. I also used buttercream icing to provide the finishing touches in the form of blue ocean waves.

This cake was made for a very special guy, celebrating his 30th Birthday. A cigar enthusiast who celebrated his birthday at a Cigar Bar in Manhattan. The cake “box” was airbrushed to create the wood grain effect and the cake was completed with handmade chocolate cigars wrapped in edible image “Cohiba” labels. Gum paste hinges and latch were hand painted with an edible gold.
