This cake was made for my son who is a ‘How to Train Your Dragon’ fan. He asked for Toothless and 3 sheep, one black and the other two white. The cake was covered and decorated in Satin Ice fondant. I used shredded coconut to get the texture on the sheep. I used a marbling technique to create the stone affect around the cake.

Shayne Greenman Chef’s Note:
April 25th 2015 marked the 100th Centenary Anniversary of The Gallipoli Landing. A fitting tribute to mark this historic anniversary of unparalleled Importance in Australia and New Zealand, The ANZAC history…Australian and New Zealand Army Corps.
This cake featured soldiers as they bravely approach the beach landing at Gallipoli with their Enfield rifles in their hands. Today we acknowledge these soldiers courage and selflessness, who fought for our countries freedom. Uncle Albert as we knew him, my Grandmas eldest brother was enlisted to go and fight the Great War at the age of 19, a week before this he had been married to Laura his beautiful beau. He went away to fight in the Dardanelles now known as Gallipoli. Albert Embarked upon the HMAT Medic A7 ship at Port Melbourne Docks on the 16th December 1916. In his pocket were a set of dice his loving Laura had slipped in as a good luck charm and to perhaps start a game of roll the dice with the boys to pass the time on board a long journey across the seas. Albert fought on the frontline.
My cake which I have made is for the memory of my Uncle Albert, in doing this I help to keep his memory and legacy alive.
My cake is a three tiered floating design referencing those two dice which he had in his pocket, the whole design is made entirely out of Cake which was meticulously prepared, covered and assembled over a specially constructed internal support system.
The war medals are replicas all in sugar of Uncle Alberts actual medals and include his ‘dog tag’ which is his identification tag, rank and battalion number.
At the top tier you see the golden ANZAC emblem – the rising sun, barbed wire wrapped around the top tier represents the battlefield and the silhouettes of men in a battalion going forth to fight and the terrible barbed wire barriers they had to crawl in mud and dirt to advance to the enemy at dawn.
The second stacked cube was perfect to display Uncle Albert’s War medals. Ticker tape ribbon is also included intertwined with wattle and other elements of the design to celebrate the end to the war and those saved from wars homecoming.
The base plinth I wanted to depict with images alone- the story ‘At the going down of the Sun – And in the morning, We shall remember them – Lest We Forget.’
I chose to do that with a lone soldier silhouetted against a beautiful shimmering sunset. The sugar flowers are red Flanders poppies and are the shed blood of the fallen soldiers and you see all poppy buds hanging their heads in remembrance. On another side of the base plinth cake, a silhouette of the lone pine watches over the burial site of many unmarked graves and graves with a basic wooden cross where men lost their young lives again in silhouette against a sunset. The base board consists of a leather belted board. I chose that because in War when a soldier is lost, the family members are returned any belongings such as belts, watches, and other personal belongings to help the family remember them by. This belt symbolizes that and our nation in how it is securely fastened to its ANZAC heritage.
And who can forget the Golden wattle to remember the clear spring days and sunny skies back home in Australia. Often you see this worn as a little sprig tucked into the headband of The soldiers olive green felt slouch hat. You hear many stories in war diaries that Wattle meant more to the joy of the returned soldiers hearts than anything else they were given upon return – The golden symbol of our country Australia.
The old scruffy Leather army boots and Enfield rifle complete with its bayonet could not be left out as baseboard decorative elements. All throughout this special design, I have used the very special colors called TrucolorLLC natural pigments in the Gel , Shine, and Airbrush color range. You can see from the vibrancy of the color range why I prefer to use these exclusively in my work, I know they are reliable and look wonderful in real life and there is no nasty tainted tastes in my cakes to worry about.
I placed the whole cake upon a board covered in old wool bale hessian because their basic hammocks or beds were made from these types of easy to carry things. A lot of thought and references were used in my design, I hope today and always you will remember why these young men some in their teens went off to fight, what was their motivation and why they did this, they did this so that we may know freedom and a life free from tyranny. So please respect them and always remember their sacrifice!

Andy’s cakes & more was my dream come true when I started it five years ago. I started it as a homemaker and always liked to give different designs to client as they would give me a freehand.
This is a communion cake for a client who had left the entire design on me. Her only requirement was a two teir cake for her son and the colour was purple. Rich fruit plum cake covered with marzipan and fondant and decorated with angels, rosary, Bible and chalice all was hand carved and edible. The client was happy as she got more than expected.
